Since today is officially proclaimed by the City of San Diego as Ralph Rubio Day, I felt it most appropriate to write about the original Rubio’s Coastal Grill location in Pacific Beach. Better yet, read my full interview with the man responsible for popularizing the fish taco in the U.S. The original location at 4504 East Mission Bay Drive is much smaller than the other restaurants, but is the only one with a marquee sign out front. The fast casual Mexican chain has been known for its fish tacos since opening in 1983, and will be offering its Original Fish Taco for only $1.75 each throughout San Diego County stores all day today. Note: their regular Taco Tuesday special is $1.75 Original Fish Tacos and $2 Fish Taco Especials after 2:30 p.m. only. My other menu favorites include the California bowl, mahi-mahi tacos and shrimp burrito.
The city is honoring Ralph for his entrepreneurial spirit, commitment to community, contributions to the food industry, and putting San Diego on the map as a leading destination for fish tacos. I’ll eat to that!
